納他黴素

納他黴素納他鏈黴菌Streptomyces natalensis)在發酵過程中產生的天然多烯大環內酯類化合物[2]。因其對黴菌酵母有較強的抑制作用, 而常被用作食品防腐劑[2],廣泛用於肉類乳製品的防腐和果蔬的保鮮[3]

納他黴素可與真菌細胞膜上的甾醇類物質結合,引起細胞死亡[4]。納他黴素還能抑制灰葡萄孢Botrytis cinerea)、擴展青黴Penicillium expansum)和尖孢炭疽菌Colletotrichum acutatum)的孢子萌發和菌絲生長[3]
